Simple quinoa recipe

Quinoa is a fantastic carb. It's loaded in protein, clean and healthy. It's my go-to carb. I keep some cooked in the fridge at all times to add to any healthy meal. It’s delicious and can be prepared in 20 minutes! It’s great to eat as a side or add to a salad. For me it stays fresh for about five days in the fridge. Prep it on Sundays and eat all week!

Ingredients

2 cups water
2 tbsp minced shallots
1 cup quinoa
1/2 tsp Hymalayan salt

Preparation

1. In a covered saucepan bring water, salt, and shallots to a boil.
2. Add quinoa and stir well. Bring to a boil.
3. Simmer on low for approx 15 minutes or until done.
4. Fluff and ready to serve!
